Fruit is picked early to maintain that brightness, then it's shipped down in refrigerated storage to Jo's own winery (Margaret River), to be processed in all her various manner of vessels to bring on that Dormilona touch. This fruit is from the traditional Lamont's vineyard planting in upper Swan, dry-grown vines at 80 years of age.
Hand-harvested, de-stemmed into an open vessel for a smidge of skin contact, then basket pressed straight to tank for a chill ferment and large-format oak. It was allowed to rest on heavy lees for 5 months, full malo then racked & a touch of sulphur at bottling.
