Grapes: Pinot Noir (100%)
The grapes are raised on red/volcanic soils with care using organic farming methods, allowing them to express their varietal characteristics and the sites they represent.
100% Destemmed berries fermented in open top fermenters. 12 days maceration with very gentle hand plunging or gentle pump over to keep the cap wet and healthy without extracting too much tannin or secondary flavours. The wine is allowed to go through malo-lactic fermentation and sits on full lees. Aged in old 500L puncheons. The barrels are left to naturally settle and cold stabilise over winter before gentle racking and blending with 20ppm SO2. This wine is not fined with egg, milk or animal proteins.
