A delicate and refreshing modern style of Chardonnay.
Grapes: Chardonnay (100%)
The grapes are raised on red/volcanic soils with care using organic farming methods, allowing them to express their varietal characteristics and the sites they represent.
100% whole bunch pressed, fermented in old 225L barriques. The wine is allowed to go through malo-lactic fermentation and sits on full lees. The barrels are left to naturally settle and cold stabilise over winter before gentle racking and blending. A small amount of SO2 (12ppm) is added at this stage so as to integrate into the wine better and protect it during bottling. The wine is unfined so no animal products have been added and it is therefore suitable for both vegan and vegetarians.
