Certified Organic. 35 people working at this cooperative covers 100 hectares with 25 of them at vineyard, the rest pasture, forage, cereals, vegetable garden and wood. The grapes come from an old vineyard from a neighbour of Valli Unite. Moscato D’Amburgo (aka Muscat D’Hamburg) is generally used for a table grape, due its soft flesh and semi-aromatic characteristic. The grapes are picked early to retain freshness and acidity.
Spontaneous fermentation and minimal intervention. Pressed directly and after 11 days from harvest, it goes into bottle. Disgorged at the end of spring after the secondary fermentation is finished.
