Named after Sebastian Riffault (Sancerre) who Travis has worked with in a number of ways over the years, this Sauvignon is full with a beautiful richness from ripeness of fruit and heaps of acidity. A wine that feels nutritional - like something you want to keep consuming.
Grapes: Sauvignon Blanc, 5% Semillon
Being on the South East facing sandy part of the vineyard allows the grapes to ripen for longer due to higher airflow, increasing the aromatics. Everything is hand picked.
No additions at all in the winery, Travis has put a huge amount go effort into improving efficiencies and impact of the winery on the environment. The winery is completely run on solar power aside from the gas forklift, all bottling materials are recycled, reconstituted sugar cane is used for cork, and is working towards eventually having a solar powered car too.
