Prayssac, Cahors, France.
Fresh, balanced, medium bodied and slightly oxidative.
Grapes: Malbec (70%) / Merlot (30%)
Grapes are grown at minimal altitude, on more or less flat land with free draining soils. Cool nights and warm days with some limestone soils. In addition to the soil being worked with the help of a horse, Simon treats the vineyard with fermented teas and extracts of plants collected from the Lot Valley such as willow, nettle, burdock, sorrel, yarrow and garlic.
This was the old original blend favoured by Simon’s grandfather. There are still no additions used in making this wine.
