Siemàn has nine hectares, but only four are planted with vines. Biodiversity is encouraged and a wide variety of flowers, plants and wild animals coexist together with vineyards, olive trees and woodland. Since the beginning the work in the vineyard is carried out with scrupulous attention, without using synthetic chemicals and trying to replace even copper with mushroom-based products to stimulate the natural resistance of the vines. Tai red is a native variety of the Berici hills, a close relative of the French Grenache and Sardinian Cannonau. The grapes come from vineyards rich in limestone with the presence of sand, clay and marine fossils.
Vinification is spontaneous in stainless steel vats, with maceration on the skins for 7 to 10 days. Aged in cement and partly in wood. Bottled without any treatment or filtration.
