Red plums and concentrated fruit from intense sun exposure, but a strong natural acidity maintained though extreme temperature drops at night, all combined with that Etna minerality.
Grapes: Nerello Mascalese / Nerello Cappuccio / Alicante / Francisi
Vines are grown at 700 meters altitude on the north side of the volcano. The climate here has extreme fluctuations between night and day temperatures, and much like the North of Italy, vast difference between harsh cold winters and hot dry summers. Some vines are over 100 years old, and the varying factors of this vineyard and the climatic conditions of Etna result in farming bu hand or mule only being possible.
Fermentations are done in open oak vets, without enzymes or thermal control.
