Grape Growing
Vines are 35+ years old and grown on sandy limestone and clay. Their first vintage of this was 1987. Chemicals have never been used in the vineyards.

Wine Making
The fruit is de-stemmed, and ferment occurs spontaneously in Concrete. The wine is then aged for 14 months in old oak casks, 500L barrique and concrete tanks.
