We only work with the grapes that we have grown ourselves. We work with the ebbs and flows of what the season presents and what Mother Nature provides. We nurture the vines and land as one, in a harmonious detail and with the up most respect to organic and honest holistic farming principles. We believe these details are important and most importantly, we enjoy it! We are growers and we do care about this plot of soil for future peoples and life - Manon.
The fermentation was simple – Pinot Gris berries floating in Pinot Noir juice for a shortish maceration together. Moved manually and mindfully into aged barrels.
Our cellar flows in a manual and mindful way with no additions being made at any stage. Fermentation is gentle with no pumps or gas - just hands and nose. Our wines are all bottled manually by gravity and by us in our shed - always on a new moon. We choose to age our wines in wooden barrels or terracotta. Vessels made from the earth - Manon.
