Old vine Gamay grown on steep slopes at 600m altitude. For this cuvée the grapes are picked last aiming for optimum ripeness.
Carbonic Maceration takes place using only CO2 produced during fermentation of his other wines, with no additions at all in the winery. The wine is then pressed off by hand and spends 6 months in barrel before bottling.
