Armed with only a horse and plough Baptiste - son of famed natural winemaker Olivier Cousin farms biodynamically in the vineyard. This wine is made from the vines that Olivier used to use to make the Le Cousin Grolleau.
Whole bunch fermentation for approximately 10 days in tank, followed by elevage in barrique. No added sulphur or any other additives.
