There are only a few hectares of Borgogna Nera still planted in Istria. Showing strong marine influences, the grape is otherwise very similar to Blaufränkisch.
The grapes are harvested by hand in small baskets, then de-stemmed and macerated on skins for 60 hours in open vats. The wine goes into oak to be aged 6 months before bottling.
