Grown on the exposed and sun-drenched parcels of Fontanella, on a soil rich in sediments. ‘Rovere’ is picked from young vines, and the grapes are hand harvested in small baskets
Fermentation occurs spontaneously, and grapes are macerated on their skins for 36-48 hours. Grapes are pressed off using a hand-crank press, then aged for six months in large oak barrels, bottled unfiltered.
