Delinquente choose to work with Southern Italian grape varieties that are suited to the hot, dry climate of the Riverland. They are drought resistant reducing the need for irrigation in farming. Soils are red sandy loam over limestone, and grapes are hand-picked.
Batches of grapes are fermented separately. One third is direct pressed, one third is fermented on skins for 4 days then pressed off, and one third is fermented until dry on its skins (approximately 12 days). The three batches are aged separately in old French oak for 3 months and blended together at bottling.
