The Syrah comes from the alluvial vineyards of Mike and Margie Sparrow at Mount Torrens with only 800kg of grapes was harvested from 0.8 of a hectare.
80% whole bunches went into Jarrah open top fermenters for 8 days. The wine was settled in tank where malolactic fermentation took place. It was then racked after 2 weeks of settling with fine lees into barriques for 11 months. Gentle maceration and a short time on skins resulted in an infusion of tannin rather than extraction during fermentation.
