Strawberry and cherry fruits, integrated tannins and a subtle, chalky texture.
Grapes: Pinot Noir (100%)
Very low yields and hot ripening conditions meant that the 2019 vintage was early and condensed.
After harvest the grapes were chilled overnight and then fermented as 80% whole bunches in open jarrah fermenters for around 10 days. Very gentle pumpovers twice a day allowed for the tannins to slowly infuse into the wine. The wine was pressed off into stainless steel tanks to complete malo-lactic fermentation. After 2 weeks of settling, the wine was racked off gross lees into seasoned French barriques. Bottling took place on February 10th 2020. The wine has had 6 months in bottle to settle and resolve.
