Grapes: Pinot Noir (80%) / Chardonnay (20%)
Based in Ambonnay (100% Grand Cru), vineyards were first converted from conventional to organic and then later biodynamic. The vineyards have had no chemical treatment since 1969.
The grapes are pressed shortly after the harvest, and a spontaneous fermentation occurs obtained through local yeasts. This is followed by malolactic fermentation. Beaufort wants all Cuvées to sit in bottle for a long time, allowing them to reach perfection before release.
